Brett ale is again a collective name for beers rather than a single style of beer. Beers in this style are fermented with Brettanomyces. Brettanomyces are fungi that brewers use as alternative yeast. Lambic beers are well-known beers brewed with this wild yeast. Brettanomyces create aromas and flavors that remind you of horse blanket and dried leather. Dry and very flavorful.
